I found it fitting to make these upon my daughter’s return from her college semester abroad in Ireland. An Irish Car Bomb shot (they don’t call it that there – for obvious reasons) is something we tried when I was in Ireland visiting her. I don’t know what the politically correct term is for the drink in Ireland – I’ve heard Irish Slammer as a possibility – but Irish Car Bomb is a commonly used term for the shot in the States. An Irish Car Bomb is an 8 oz. glass of Guinness® with a shot that is half Jamesons® Irish Whiskey and half Baileys® Irish Cream. To drink it you drop the entire shot glass into the beer and drink it all at once. The flavors blend together beautifully. It is very delicious!
