Irish Car Bomb Cupcakes

I found it fitting to make these upon my daughter’s return from her college semester abroad in Ireland. An Irish Car Bomb shot (they don’t call it that there – for obvious reasons) is something we tried when I was in Ireland visiting her. I don’t know what the politically correct term is for the drink in Ireland – I’ve heard Irish Slammer as a possibility – but Irish Car Bomb is a commonly used term for the shot in the States. An Irish Car Bomb is an 8 oz. glass of Guinness® with a shot that is half Jamesons® Irish Whiskey and half Baileys® Irish Cream. To drink it you drop the entire shot glass into the beer and drink it all at once. The flavors blend together beautifully. It is very delicious!

The cupcakes are a Guinness® cake filled with Jamesons® Whiskey ganache and topped with Baileys® buttercream frosting. I found the recipe on the Brown-eyed Baker’s blog. Click here if you want to try it! Check out her blog for other delicious recipes!
